This is a New Brunswick lobster. It’s huge and meaty and damn good.
My favourites ones come straight from the fish shop to a nice picnic outside where you can dig in with abandon. But I was short on time and long on hunger. So I caved and ordered one from a restaurant. I got a plastic bib.
Tails first, then claws, then the little skinny legs. Green gooey guts optional but I like them on garlic toast.
It’s never really fancy. This one came with a baked potato, but really who cares. It’s all about getting your hands dirty and ripping that lobster apart. Yum.
